Leos are the kings of the jungle for a reason- big hearts matched with big ambition, Leo is that friend that everyone likes and can count on for a good time. They’re very social and playful which keeps them at the center of attention and they love the audience, they’re natural born leaders and are known for their courage and kindness making them an ideal leader overall.
They don’t fail, they fix. Admitting they’re wrong before they’ve already fixed it isn’t likely because they are usually perfectionists and as leaders feel natural staying in control. They can be highly protective of their loved ones who they’re also very loyal and genuine to. Leo is controlled by the sun which lends them that bright personality and larger than life attitude… as fire signs, they’re super enthusiastic, excitable and even dramatic sometimes! They also do despite what they might say, care about what others think of them, they’re attitude and perception is important to them furthering them as leaders and not dictators. Roar!!
Shopping for a Leo? Firstly, a bouquet of Sunflowers never hurt anyone and least of all a Leo. That bright color, that grand shape, everything about the flower screams Leo! Secondly… leaders ruled by the sun should be treated as such on their birthdays– I’m talking luxury. Whatever they might find that in, be it food and wine, clothing, jewelry, day spa certificate, etc. – take note and run with it. Shower them with attention and compliments, throw or join a party, because they love being social and will love to have all their family and friends around them to celebrate.
Happy Birthday, Leo! I was inspired by the bold, generous, warm and loving lions – to create a spiced pear pie! The color, the comforting decadence that is any pie… and I had to go dramatic and do a lattice top. Pie is best when eaten warm, out of the oven… with friends and that’s a perfect way to start a Leo birthday. Over a gorgeous, bright yellow and orange bouquet – go big or go home at Leo’s birthday.
How can Leo inspire you? Have you been thinking or doing? Because everyone can use a kick in the butt from now and again.. make sure you’re taking control more and leading the way even if that’s outside your comfort zone. Sometimes faking the confidence before you actually have it is the way to begin – give it a try! And summer means social occasions… you can’t hide in the air conditioned room forever. Come outside and play!
About this recipe… I’m using Otto’s Cassava Flour (not to be mistaken with Tapioca flour, they are different). I’m also using coconut oil instead of cold butter, which is faster and makes it vegan, the outcome will not be as flakey because of that but it holds up very well, and is easy to put together with minimal ingredients.

*Before you start, please note that you will not have to refrigerate the pastry crust, in fact, it’s better if you don’t for a softer crust. Follow steps below in order, if you want to make something ahead to save time, make the filling ahead and refrigerate, but the pastry crust will not take long like a traditional one would.
*Tip- for the crust on the perimeter, resist the urge to make it too “crusty”, keep it thin and don’t build on it too much or it may not cook thoroughly. Simply discard the extra if you have it or use it for something else. This dough takes a little practice.

Hi Alison my mother and brother are both Leo and they would love this pie! Vegan baking is my new "thing" and I can’t have enough of it. Your pie looks incredible and I adore the lattice work (we do kind of the same for the "crostata", which is an italian dessert). Great pics!

Gorgeous pie, Alison. Just look at your lattice work! Peach is always a favorite around here, in any form. And you’ve included coconut oil in your recipe! Hooray! I’ve not tried coconut oil in pastry, but know it must taste delicious!
It’s my first time trying coconut oil in pastry as well – it’s not the same as butter, but still great!
