Nothing makes me happier at a health food store, than finding and grabbing a bunch of those date snacks covered in coconut… YUM. How good are those things and do you know what I’m talking about?? They’re pretty popular from what I’ve seen, they’re usually in those plastic bins where you can use a little hand shovel to get a bunch and throw them in a bag. Good thing they control it that way, or some out of control crazies might take too much (I don’t know who… but just saying). 

Anyhow! I’ve been playing around with some raw bites like those for example, and these little raw truffles are what it’s all about today! Do yourself a favor and invest ($$$) in some Maca powder (not the same as matcha), I love it! This stuff is on the superfood list, it was historically used for healing and is well known to fight stress, increase stamina, boost libido and fertility, and in general boosts the immune system and overall energy levels (or so it says on the back of this pouch I’m reading off of)… I can certainly attest to the energy boost it gives, and I can’t wait to test out more recipes with it. I’ll have to devour each and every one of these truffles to confirm the rest of these statements, of course. You’ll have to try it out for yourself as well…

Other benefits? you’re basically eating chocolate truffles and they’re low in fat, SIMPLE to make, and packed with nutrients to keep you energized. These make a great snack before/after the gym or for a quick pick-me-up during those midday slumps. Plus, this method is so versatile… feel free to get creative and even add in some hemp protein to keep you fuller longer too.


Maca & Cacao Truffles (simple, vegan, gluten-free)

Ingredients:

gluten-free & vegan // makes 12+ truffles

  • 1 cup dates, pits removed
  • 1 tbsp raw cacao powder (plus more for topping)
  • 2 tsp maca powder (plus more for topping, I used this brand)
  • pinch sea salt

Directions:

  1. In a food processor, add the pitted dates, cacao powder, maca powder and sea salt. Mix until blended and you are able to form the mixture into a ball.
  2. Remove from food processor and roll in your hands into a large ball, split the ball into several pieces depending on how large you would like them and place on a piece of parchment paper (it will be very sticky!). I make them rather small and ended up with 14 in one shot.
  3. Using a sifter, alternate cacao and maca powders and sprinkle over top of the truffles. Proceed to roll the truffles into the excess powders, soaking up as much as you can. Serve!
